This Christmas we received an extra special gift. Tom's sister and her long-time boyfriend cooked us an authentic Ethiopian feast! They both love to cook (and are very good at it I might add). Tom and I felt so blessed and we couldn't wait to see what it tasted like. They made 'njera (bread) kind of like a thick crepe, along with a chicken and boiled egg stew, and a lentil salad for the first course. Our second course included a beef stew, a raw beef (sliced very thin) dish tossed in warm butter, along with a collard greens and cottage cheese salad. There was so much food - we actually had it again a few nights later. The food was, well, different :)! It was lots of different spices that we don't eat much in the states. We also thought it was spicy (but we're wimps). They even toned it down for us. Tom loved the raw beef, but wasn't a fan of too much else. I actually really liked the chicken and boiled egg dish. What you do is tear off a piece of 'njera and grab whatever is on your plate with it, then you pop it all in your mouth and enjoy! Here I am doing just that...

It was also really neat that so many of our family members got to experience this with us. My mom and most of Tom's sisters were here (his brother and his wife, along with his aunt and uncle got to experience the food the second time we ate - a few days later). I love that our family is so supporitive of our decision to adopt! They are all such an incredible blessing to us. We love them each dearly.

YUMMM, we love ET food now:) If you go into Seattle there are some great authentic places to eat! Thanks for the comment on my blog, and how exciting for you!!! What ages? Yeah, and we will be watching your journey:)
